Cherry Tomato and Mozzarella Raclette
Serves 4 - 6 people
Ingredients:
- 1 small basket cherry tomatoes
- 100g fresh mozzarella
- 3 bacon slices
- 1 bunch fresh basil, stems removed, chopped
- 100g pre-made croutons
Preparation:
- Halve the tomatoes and place them in a bowl.
- Slice the mozzarella, sprinkle with the chopped basil and place on a serving plate.
- Next, finely chop the bacon and place in small bowl.
- Place croutons in another bowl.
To serve:
In a raclette pan, place a few tomato halves and croutons, top with a slice or two of mozzarella and some bacon pieces. Heat under the raclette grill until the cheese is melted and the bacon crispy.
