Can you use a ceramic caquelon for a Fondue Bourguinonne?

Posting date: 3rd March 2010 10:10

The problem with using a ceramic dish for a Fondue Bourguinonne is that it is hard to get the oil hot enough to really sear the meat. I am sure some people do live with it, but I am not convinced by it.

Ideally, you need 2 fondues, a ceramic caquelon for Cheese Fondue, which is the best material to keep the cheese warm without it burning, and an metal fondue to heat oil for the Meat Fondue Bourguinonne. The best material as a jack of all trades, which would do both the cheese and the oil, is probably a cast iron fondue from Staub. Just copy and paste the following URL into your browser :

Staub in France have just confirmed that they agree with me: their Mixte Fondue Set is good for both cheese and meat fondues.
