Why are Emile Henry Flame Fondue Sets so recommended?
Posting date: 14th September 2010 21:53
Emile Henry Flame Fondue Sets are made from very strong ceramic, and are perfect for cheese fondues. I would not recommend any ceramic fondue caquelon for a broth or oil based Fondue.
The Emile Henry Ceramic Flame Fondue caquelon is perfect for cheese (or chocolate) as it diffuses the heat slowly and evenly and then keeps the cheese hot for longer. A stainless steel fondue is likely to burn the cheese, which would then cool much quicker as well.
The Flame Fondue bowl can also be used directly on any hob except induction - including a gas flame - which is very useful when first preparing the fondue ingredients before placing the fondue at the table. The caquelon is exceptionally strong and the secret of how Emile Henry have achieved this is well guarded!
Therefore, the main reason to recommend Emile Henry fondues over other ceramic fondues, is the strength of the clay
