Mexican Marinaded Steak Raclette

This Tex-Mex inspired dish is great for an informal party - very easy and fun. And the guests choose how rare or well cooked their meat is!

Use on either a Hot Stone or a Raclette Grill.

8 servings need minimum 2lbs of tender steak cut into thin strips.

1. Make the marinade at least 1 hour in advance:

  • A half cup olive oil
  • 6 cloves garlic
  • 4 tablespoons of red wine vinegar
  • Half a cup of a good quality tomato ketchup
  • 3 teaspoon fresh, chopped basil
  • 1 teaspoon salt or a generous helping of soy sauce
  • 1 teaspoon of cayenne pepper
  • 6 cloves garlic

Press the garlic into a large bowl and stir in all the other ingredients. Put the thin strips of meat into the marinade and stir gently until well covered.

Marinate for an hour - stir once only.

2. Get your Raclette well warmed up in advance. Bring the meat to the table and let your guests cook it themselves as well cooked or rare as they like.

Serve with sour cream, salsa, guacamole, warmed bread (Mexican if you can get hold of it) and Mexican beer with slices of lime in the top of the bottle.
